Tonight's Dinner - Spinach & Feta Stuffed Chicken

I haven't posted in a while. I think I'll start back easing into it.

I made dinner tonight by adapting a recipe based on what I had in the fridge. Here's the original recipe. Of course I took the liberty of making it my own way, not following the recipe in the least.


Basically I took 2 large chicken breasts and seasoned them with garlic, salt and pepper.


I made the filling with feta, chopped fresh spinach, 2 cloves crushed garlic, roasted red pepper, red onion, sliced black olives, pine nuts, mayo, sour cream, oregano, salt, and pepper. (Sorry no measurements here!) Then I browned one side of the stuffed breast in olive oil in my Le Creuset and then flipped it. I put them in a 375 degree oven for about 12 minutes, then let them sit for 5 minutes once I pulled them out.


Would definitely make these again. I'm intrigued with the stuffed chicken breasts. I remember making something this summer on the grill that was delish.
