Tried a new recipe tonight - Chicken with 40 Cloves of Garlic. I've always wanted to try this and it was as good as what I'd heard. I did not use 40 cloves however, I decided to take others advice and use 20 cloves, smashed - it actually gives it more flavor. The garlic roasts and mellows in the bottom of the dutch oven while the chicken gets flavored through the aromatic steam. It was so moist, falling off the bone. I've kept the drippings/broth to use later this week.
I have to admit, there was another star of the meal tonight - Trader Joe's Arancini Bites (breaded rice balls filled with fontina cheese) with Puttanesca Sauce. If you have a TJ's near you, run out and buy this to have on hand. They are soooooo good and easy. Two thumbs up.
