3:00ish Sunday Afternoon




I've fallen in love with refrigerator roll cookies. You make the dough, stick it in the fridge and forget about it until you need it. Like at 3:00pm on Sunday when you realize you really, really, really want a Peanut Butter Chocolate Chip Shortbread cookie.


I'm not usually a big fan of shortbread, however these little gems were amazing. They were melt-in-your mouth, fall apart tender. I think that's a good thing as far as shortbread goes, right? For me, the peanut butter was the winner in these. Oh, and I used mini-chocolate chips vs. regular ones.


I had one (+ more than a few bites of the dough, oh my!) and packaged the rest in Weck jars. As soon as I'm done embellishing those I'll share the photos.  In the meantime, if you want to make these, head here. You won't be disappointed.

  1. I so want to eat these! I am not the best at baking as I do not like to follow directions....but I just might have to try these tomorrow!
